
Ingredients
- 1kg cob
- 30g fresh lemon thyme
- 100g Panko crumb
- 2 egg yolks
- 2 tsp pink salt
- 2 tsp sweet chili sauce
- 1 tsp grain mustard
- 1 tsp ground black pepper
- 200ml sunflower or
- Canola oil to fry
- Chop the fish into mince with a chopping knife do not blend or mince.
- Add the rest of the ingredients and mix with your hands.
- Weigh into 150 to 200g portions and shape into burgers using a burger press.
- Dust in flour and fry in a hot pan with sunflower oil till brown.
