
Ingredients
- 500g garlic fried shrimps
- 2 tsp cayenne pepper
- 5 tbs Robertson Fish spice
- 200ml Helmans mayonnaise
- 200ml double cream yoghurt
- 2 lemons juiced and zested
- 40g sweet peppadews
- 100ml sweet chilli
- 2 ripe diced avocado
- 1/2 a cucumber
- 10 firm ripe cherry tomatoes
- 100g Crushed garlic
- 1tsp pink salt
- 2 lemons to garnish
- 1 bunch of chopped parsley
Method
- Blend the mayonnaise, yoghurt , fish spice, cayenne pepper, peppadews, parsley, garlic, lemon juice and zest with the sweet chili into a dressing.
- Add the shrimps through the dressing and rest for two hours to marinate in the fridge.
- Dice the avocado, tomato and cucumber together and place in cocktail glasses.
- Top with the marinated shrimps and serve.
