Roasted onion quiche

topped with feta chives and red peppers

  • Puff pastry
  • 8 egg yolks
  • 500ml cream
  • 250g caramelised onions
  • 100g feta
  • 1 Bunch chopped chives
  • Black sesame seeds 1
  • Finely diced red pepper


  • Use a pastry cutter 40mm Diameter or whatever size quiche you would like to make.
  • Cut the disks and press them into muffin trays or quiche foils from your local baking shop.
  • Separate the egg yolks and whisk into the cream.
  • Season with salt and pepper and fill the tart shells with cream and egg custard.
  • Spoon some caramelized onions into each pastry shell and bake in a hot oven set at 200C for 10 min then turn the heat down and bake for a further 18 min till the shells are cooked.
  • Remove them from the oven and cool. Once the shells have cooled top with feta diced peppers and chopped chives garnish with black sesame seeds.
