Grilled beef fillet

 on lemon infused humus topped with rocket and sunblushed tomatoes

Ingredients for Steak
  • 1 kg of beef fillet sliced into medallions
  • 200ml Canola oil
  • 50g White bread flour
  • 50g Mazina
  • 100g Butter
  • 500 ml milk
  • 500ml cream
  • 15g Brown Sugar
  • 1/2 tsp Pink salt
  • 30ml ground black pepper
  • 60ml White vinegar
  • 30g wild rocket
  • 15 Sun blushed tomato wedges
Ingredients for the Humus
  • 15g Garlic peeled and diced
  • 400g cooked chickpeas
  • 1 lemon juiced and zested
  • 2 tbs Tahini
  • 100ml olive oil
  • 1/2 tsp pink salt
  • 15ml brown sugar or honey
  • Peel the garlic ginger and blend together with the sugar salt vinegar.
  • Add the cooked chickpeas Tahini and olive oil and blend to a fine paste ready to serve.
  • Grill and slice the Fillet and plate with rocket and sunblushed tomatoes
