Custard tarts topped with fresh blue berries

Dessert Please!

  • 8 egg yolks
  • 500ml cream
  • 10ml vanilla essence
  • 1tsp Mazina (corn flour)
  • 1 punnet of blueberries for garnish
  • 100g sugar
  • 1 Sheet of Riches or home made puff pastry

CHEF'S TIP... Dusting with vanilla icing sugar before serving adds sweetness to the store bought unsweetened pastry


  • Place the cream vanilla in a pan and bring to the boil.
  • Beat the eggs and sugar together.
  • When the cream is boiling add the egg yolks and creamed sugar together.
  • Using a pastry cutter cut out circles of ready made puff pastry or your own home made puff pastry. Push the circles into a muffin tray.
  • Pour 40ml of cream mixture into each tart and bake for 40 min at 180C till the pastry is cooked.
  • Remove the tarts from the oven and remove from the muffin trays. Place them on a baking wire to cool.
  • Once they have cooled dust them with icing sugar and garnish with blueberries.
