
Ingredients
- 4 baked chocolate chip muffins
- 80g coco powder
- 100g sugar
- 4 egg yolks
- 100ml cream
- 50g melted milk chocolate
- 15 Orange segments
- 5 Strawberries
- 30 Blue berries
- 4 sprigs of mint
- 10 Gooseberries
- 2tsp Pure orange pulp or 1tsp of pure essence
Method
- Separate the eggs and whisk the sugar and yolks together until pale in colour.
- Then add the Coco powder and cream with the melted chocolate and fold together.
- In a separate bowl whisk the egg whites and orange pulp fold through the mixture and place in a fridge to set for an hour or more.
- Break the chocolate muffins and plate with the berries and mousse and serve.
