
PREPARING THE FISH
- 600g cooked chicken fillets
- 2 Ripe Kiwi fruit
- 100g boiled walnuts
- 2 Large Coz lettuce
- 1 Lemon juiced
- 50ml avocado oil
- 1 bunch flat parsley
- 200ml full cream yoghurt
- 100ml mayonnaise
- 1 tsp Himalayan salt
- 1/4 tsp ground black pepper
- 1 tbls organic honey
- 100g soaked sultanas
Method
- Marinate the chicken in lemon garlic and honey and poach till cooked season with Himalayan rock salt.
- Chop the lettuce and dice the chicken.
- Add the diced kiwi and dress with the honey lemon and yoghurt dressing
