Chicken waldorf salad

with Kiwi and honey and yoghurt dressing topped with potato crisps

PREPARING THE FISH
  • 600g cooked chicken fillets
  • 2 Ripe Kiwi fruit
  • 100g boiled walnuts
  • 2 Large Coz lettuce
  • 1 Lemon juiced
  • 50ml avocado oil
  • 1 bunch flat parsley
  • 200ml full cream yoghurt
  • 100ml mayonnaise
  • 1 tsp Himalayan salt
  • 1/4 tsp ground black pepper
  • 1 tbls organic honey
  • 100g soaked sultanas

Method

  • Marinate the chicken in lemon garlic and honey and poach till cooked season with Himalayan rock salt.
  • Chop the lettuce and dice the chicken.
  • Add the diced kiwi and dress with the honey lemon and yoghurt dressing
