Mushroom foraging with a biltong recipe

It’s a crisp autumn morning, the mist comes rolling over the mountains, ominously… The day has finally arrived to go foraging after the recent rains and I go to the old apple grove I often frequent – they’re here. Walking through I had a choice of the best ones to pick from.

Funky Fungi Biltong Recipe

Ingredients

  • 2 – 3 Kg mushrooms
  • 1 cup of soya
  • 3 tbsp Worcester Sauce
  • 1 clove fresh garlic
  • 200g chopped onion
  • 1 tbsp coarse black pepper
  • 1 tbsp salt

Method

  • Clean all mushrooms
  • Cut mushrooms into pinkie thickness sized slices
  • Steam mushrooms for twenty minutes
  • Lay in marinade from ingredients above for 2-3 hours
  • Smoke in a hot smoker for 2 hours or until biltong texture
